1. Place the filter in the Chemex, the three layers of paper go in the front of the brewer

2. Preheat the filter and brewing system with hot water then discard it.

3. Place the brewer on the scale, tare and add coffee grounds to the filter

4. Pour 100g of 200 degree water over the grounds, let bloom for 40 seconds

5. Pour 200g of water at a time in tight circular motions, keeping the coffee bed below the top of the cone. Let brew finish and discard the filter

 
 

Why We Love It

The glass carafe allows you to keep it warm on a stove burner. Also the woven filter traps the oils and bitterness.

Coarse side of medium

The Ratio

Coffee to water ratio of 1:16.5. For example, you will need 40g of coffee for 660g of water.
